Banana, Peanut Butter & Honey Ice Cream

Banana, peanut butter and honey ice cream

No cream, no eggs, no custard base. All you need are three ingredients, throw them in your food processor and voila, banana, peanut butter and honey ice cream that only has 173 calories, about 3 grams of fat, and around 4 grams of fiber.

I remembered seeing this recipe a while back, on Serious Eats, and last night called for a batch of this "ice cream".

My little man loved the stuff.

Banana, Peanut Butter and Honey Ice Cream

Ingredients

  • 1 frozen banana (pre-cut into chunks)
  • 1 teaspoon peanut butter
  • 1 teaspoon honey

Directions

Double, triple or quadruple the ingredients listed above to serve more than one person. Put ingredients in food processor, and pulse until smooth. Scrape down sides if needed. Serve immediately.

PS-My husband and I talked about the mix-in magic that this ice cream could take, (e.g., chocolate chunks, cocoa nibs, toasted walnuts, etc.).
