Black Bean Cakes

I needed a hearty vegetarian recipe that would travel well. The first thing that came to mind was a black bean cake. The morning that I made them I turned them into a delicious huevos rancheros with an egg, salsa and cilantro garnish.

Black Bean Cakes

serves 4

Ingredients

  • 2 cans of black beans (rinsed)
  • 1 can of diced tomato (drained)
  • 2 garlic cloves
  • 1 egg, lightly beaten
  • big handful of parsley and cilantro
  • 1 1/2  teaspoon of cumin
  • 10 dashes of hot sauce
  • 1 cup of fresh bread crumbs
  • 1/2 an onion
  • 2 tablespoons of olive oil

Directions

Preheat oven to 375 F. Line your sheet pan with parchment paper and set aside. Add all ingredients listed to a food processor and pulse until just combined (you want it to still have texture!!). Form into 6-8 patties and bake for 20-25 minutes.

Serve as black bean burgers, or huevos rancheros as described above!
